İstanbul Üniversitesi Cerrahpaşa Tıp Fakültesinden 1994’te mezun olarak tıp doktoru unvanı aldı. Genel Cerrahi uzmanlık eğitimini İstanbul Tıp Fakültesi’nde 1999’da tamamladı. 2004-2005 arasında Henri Mondor Hastanesi Damar ve Endokrin Cerrahisi Servisinde, Fransa’da çalıştı. 2006’da doçent ve 2013’te profesör oldu. Prof. Dr. Murat Aksoy yurt içinde ve yurt dışında faaliyet gösteren damar cerrahisi derneklerinde yönetiminde görev yapmıştır. Damar cerrahisi konusunda yurt dışında ve yurt içinde basılmış kitap bölümleri, makaleleri ve kongre sunumları bulunmaktadır. Bunların yanı sıra halk sağlığı konusunda yayınlar yapmakta olup “Doktorum Yanımda -Zamane Hastalıkları” ve “100 Yıllık Yaşam için 50 Öneri” kitaplarının yazarıdır.
