What inspires a young man from rural Japan to plant roots in Kerala? For Shintaro Tanaka, it was a deep admiration for India—sparked by a film, nurtured through travel, and realised through food. After running two cafés in his hometown of Ogawa and exploring organic farming, Shintaro arrived in Kerala in 2023 on a cycling journey. What began as an adventure turned into a calling. Today, he brings handcrafted Japanese Udon noodles and authentic flavours to Keralites through his café, OGAWA. In this heartfelt talk, Shintaro shares how culture, cuisine, and curiosity shaped his path—from a small Japanese village to a new life in India—proving that food can be a powerful bridge between worlds. Shintaro, introduces Keralites to some authentic flavours of Japan, notably its handcrafted Udon noodles. This is not Shintaro’s first rodeo. He used to run two cafes back in his village of Ogawa. She started her career as a food engineer and continued her path in entrepreneurship and technology transfer. She currently works as a lecturer at Sinop University and also serves as the deputy coordinator of the Technology Transfer Office and the Project and Data Management Office. Akçatemiz is one of the 45 licensed technology transfer professionals in Turkey with the RTTP title. She has taken an active role in EU, TÜBİTAK, and Development Agency projects and provides consultancy as an SME mentor. She delivers trainings on business model development, design thinking, project management, and entrepreneurship. In 2024, she was selected as one of the 12 participants in the “Innovation Leaders of the Future” program. Entering the cosmetics industry with the Lumi Naturel brand, she aims to establish a bioentrepreneurship school that merges science, the environment, and innovation through academic publications, mentorship, and public speaking.
